BETTER BANANA BREAD

This one's a hit with the kids, too.

This loaf is #paleo #glutenfree #sugarfree and ready in under an hour. The bananas mean it isn't #keto but sometimes it's worth it.


Tools:

  • Standard US measuring set (like this)

    • 2 x tbsp

    • 1 x cup

    • 1 x tsp

    • 1 x 1/4 tsp

  • 2 large bowls

  • 1 fork

  • 1 spoon

  • 1 whisk

  • 1 loaf pan (like this)

Ingredients:

  • 3 ripe (ripe!) bananas

  • 3 large eggs

  • 2 tbsp granulated stevia (like this)

  • 1 tbsp vanilla extract

  • 2 cups almond flour or ground almonds

  • 1 tbsp ground cinnamon

  • 1 tsp bicarbonate soda

  • 1/4tsp salt

  • 1 knob salted butter for greasing (about 1 tbsp)

Instructions:

  • Step 1: Preheat your oven to 175°C

  • Step 2: Mash your 3 bananas (it should be about 1 1/2 cups worth)

  • Step 3: In the first bowl mix:

    • Mashed bananas

    • 3 large eggs

    • 2 tbsp granulated stevia (use honey if you don't think stevia is #paleo)

    • 1 tbsp vanilla extract

  • Step 4: In the second bowl whisk together:

    • 2 cups almond flour or ground almonds

    • 1 tbsp cinnamon

    • 1 tsp bicarbonate soda

    • 1/4tsp salt

  • Step 5: Mix the almond flour mixture into the banana mixture bowl until smooth

  • Step 6: Grease your loaf pan with 1 tbsp butter (get in the corners!)

  • Step 7: Pour your mixture into the loaf pan (tap the pan to evenly distribute)

  • Step 8: Bake until browned and set (40 minutes works for me. Toothpick inserted in its centre should come out dry)

  • Step 9: Leave it to cool completely for two hours

  • Step 10: Enjoy! I (surprise surprise) slather salted butter on top of mine.

Shopping List/Stock Check:

  • Bananas (3 and make sure they're ripe)

  • Large eggs (at least three)

  • Granulated stevia (like this)

  • Vanilla extract

  • Almond flour or ground almonds (at least 200g)

  • Ground cinnamon

  • Bicarbonate soda

  • Salt

  • Salted butter

*Tip: Your local fruit and veg shop is usually a good place to find ripe (ripe!) bananas.
